Grandma Tracy’s Tomato Rice Soup

As simple as it is delicious, this quick soup will soon be a weeknight to-go.

Serves 6

What You Need: 

2 tablespoons olive oil
1 sweet onion, chopped
2 carrots, grated
2 garlic cloves, minced
2 28-ounce cans crushed tomatoes
1 tablespoon dried oregano
1/2 cup fresh basil, chopped
1/2 cup cooked brown rice
1 teaspoon baking soda
1/2 cup non-dairy milk 

What You Do:

  1. In a soup pot over medium heat, heat oil. Add onion, carrots, and garlic and sauté until onion is very soft. Add tomatoes, oregano, and basil and bring to a simmer. Cover and cook 30 minutes.
  2. Add rice, stir, and bring to a boil. Sprinkle baking soda on top. Once baking soda has stopped bubbling, turn off heat and stir. When cooled slightly, add non-dairy milk and stir. Serve immediately.
