Coconut makes its way into countless vegan treats: ice cream, pies, milks, curries, and isotonic beverages to name just a few. But while we had heard whispers about its ability to double as smoky vegan bacon, we had never had a chance to assess for ourselves until Phoney Baloney’s Coconut Bacon made its way to our offices. With delightfully smoky flavor, a hint of maple, and the perfect amount of crunch, it definitely left us wowed and reeling with ideas for its use. PB suggests using it on doughnuts, cupcakes, and sandwiches, so it oscillates between being sweet and salty—but don’t we all?
