Burlington, VT: First Veg Restaurant Opening Soon

Revolution Kitchen will be the first completely meat-free dining establishment in Vermont’s largest city.

Revolution Kitchen is slated to open in Burlington, VT next month, according to Vermont news site Seven Days. Owners Debra and Peter Maisel noticed a lack of all-vegetarian restaurants in the city while visiting their children who attended college nearby. The restaurateurs are no strangers to running a kitchen, as they previously owned vegetarian diner Luna 61 in Tivoli, NY for 17 years. Though the Maisels will be selling Luna 61, some of the more popular dishes will appear on the new menu, such as scallion pancakes, tofu wontons, and a faux bacon and veggie-stuffed tortilla with Thai dipping sauce. New dishes at Revolution Kitchen will include ravioli, sweet potato enchiladas, and meatless sloppy Joes, plus many of the restaurant’s desserts will be sugar- or gluten-free.
