Washington DC-based animal advocacy group Compassion Over Killing (COK) recently released a vegan recipe guide to cater to the growing Spanish-speaking population in the United States. “Comida con Amigos,” or “Food with Friends,” is a 16-page packet filled with 20 plant-based recipes from healthful entrées such as cactus salad and vegan tamales to desserts including sweet corn pudding and champurrados. While COK believes that the guide could be a helpful health resource to the Spanish-speaking community—which currently suffers from high numbers of diet-related conditions such as high cholesterol, diabetes, and hypertension—it also uses the material to educate consumers on where their food comes from by including anecdotes about rescued farm animals.
