Chicago Magazine Spotlights Raw Food Entrepreneur

A new Windy City restaurant is inspiring consumers to become more health conscious, one raw meal at a time.

Chicago Magazine recently published an exclusive interview with Polly Gaza, co-owner of Raw, an upcoming eatery in the city's River North neighborhood that serves 130 different healthful vegan dishes to-go every day. Gaza talked about how her passion for nutritious cuisine was inspired by her kids and the importance of feeding growing children healthy food, as well as her mission to inspire consumers to be more critical of their diets. “We feel that every time somebody comes through our business, if we have raised their awareness and consciousness level of what they eat at their next meal, we have done our job,” says Gaza.
