Kitchen 17 blew into the Windy City vegan scene after Don Clements signed a lease in March for an empty storefront that he discovered last autumn while taking a walk, Chicago Magazine reports. Two months after signing, the Chi-Town eatery was winning the favor of patrons’ taste buds with rosemary-roasted zucchini, red onion, and carrot. Each dish is made from scratch. “The only thing that comes out of a package is the vegan cheese,” Clements tells CM. According to K17’s Facebook page, the cheese will be made in-house as well using recipes from Miyoko Schinner.
