Every year Buffalo, New York hosts the National Buffalo Chicken Wing Festival to celebrate the food that the city gave birth to. This year, the annual convention had a meat-free addition—a veggie buffalo wing made from breaded green beans and paired with hummus, which was served at a tent sponsored by BlueCross BlueShield. The meatless wing’s creator, Steven Binks, a Buffalo chef and local television personality, told The Buffalo News that the hot sauce and gorgonzola ingredients he used to flavor the novel food item “typify what a Buffalo wing is,” which “gives it that chicken-y wing-type feel.”
