Kentucky Vegan Jerky-Maker to Open Café

Stanley Chase—the man behind Louisville Vegan Jerky—will launch Morels Cafe with sandwiches, a meat and cheese counter, pop-tarts, and jerky snacks.

The proprietor of Louisville Vegan Jerky, Stanley Chase III, will open vegan restaurant Morels Cafe in Louisville on May 2. The idea for Morels first came in 2011 in the form of a food truck, which Chase operated as the first vegan food truck in Louisville, before opening his jerky production facility. Now, the concept has come full circle with a cafe dedicated to both the former truck and storefront for his sought-after jerky. Chase is a member of trade group Plant Based Food Association and works with fellow members to create innovative menu items. “I want to feature something Beyond Meat is making, I want to feature something Tofurky is making, [and] I want to feature something Miyoko is making,” Chase said. “These are people who are putting all their energy into one thing, and doing it really, really well.” Morels Cafe will open with the promise of providing “vegan food that doesn’t suck,” such as the Loaded Potato Salad and Buffalo Chicken Dip (available by the pound), a Philly cheesesteak wrap, muffuletta sandwich, a selection of vegan cheeses by Miyoko’s Kitchen, Cheezehound, and Vtopian, and homemade pop-tarts. Hot kitchen items including a take on Arby’s meat-and-cheese sandwich called The Farby, Pulled Pork Sliders, kid-friendly Pepperoni Pizza Pockets, and more will debut on June 1.
