Peak asparagus season is upon us, which means it’s time to pick up a fresh bunch at your local farmers’ market. We’re loving this Chilled Asparagus Soup because it showcases the vibrant color and unique flavor of the vegetable in a fun and refreshing way. Even better? Nothing goes to waste here, as we’re using the entire asparagus from end to tip.

What you need:

2 cups water
1 pound fresh asparagus
4 cups vegan chicken broth
2 cups coconut milk
1 teaspoon lemon juice
1 teaspoon salt

What you do:

  1. In a medium pot, bring water to a boil. Add asparagus, cover, and cook for 3 minutes, until bright green and tender. Remove from heat and do not drain.
  2. Into a food processor, pour asparagus and water. Add vegan chicken broth, coconut milk, lemon juice, and salt. Purée until mixture reaches a smooth consistency.
  3. Refrigerate for 2 hours and serve chilled.
