Steve Ells, founder, chairman, and co-CEO of Chipotle, sees this vegan option as an extension of the company’s support for ethical farming practices. Ells wanted to provide a delicious, cruelty-free alternative for vegans, vegetarians, and meat-reducers alike. Currently, this menu item is only available at the Dupont Circle location, but according to Ells, response has been positive, and it has the potential to expand to other restaurants.
