Homemade Cream Cheese

Bagels for breakfast is a New York tradition that has spread across the US. While margarine, nut butters, and jam are always delicious on a bagel, this recipe makes a dense, smooth, not-too-sweet spread similar to whipped cream cheese.

What you need:

  • 1/2 pound firm tofu
  • 1/4 cup plain soy yogurt
  • 1/2 cup pure maple syrup
  • 1/2 teaspoon cinnamon
  • 1 tablespoon tahini
  • 2 teaspoons pure vanilla extract
  • 2 teaspoons flour

What you do:

  1. Preheat oven to 350 degrees, and lightly grease a one-quart baking dish.
  2. Place all ingredients in a food processor or blender. Blend well, stopping frequently to scrape the sides.
  3. Pour mixture into the baking dish and bake, uncovered, for 40 minutes or until set. Cool completely before serving.
