Not Tuna Salad

This salad is from the raw food cookbook, Angel Foods: Healthy Recipes for Heavenly Bodies.

What you need:

  • 1 cup almonds, soaked for 24 hours
  • 1/2 cup sunflower seeds, soaked 4 to 6 hours
  • 1/2 cup celery, minced
  • 1/2 cup red onion, minced
  • 1/2 cup parsley, minced
  • 2 tablespoons lemon juice
  • 1/2 teaspoon sea salt
  • 1 tablespoon kelp powder

What you do:

  1. Using a juicer or food processor, process almonds and sunflower seeds.
  2. Add remaining ingredients and mix well. Serve with crudités.
