Old-fashioned Spinach Salad
This traditional spinach salad has a healthy vegetarian twist.

What You Need for the Salad:
- 1 large bag of baby spinach, washed and dried
- 4 strips veggie bacon, cooked according to package directions
- 6 or more button mushrooms, brushed clean and sliced
- 1/4 cup walnut halves
What You Need for the Dressing:
- 1 tablespoon balsamic vinegar
- 1 teaspoon olive oil
- Salt and pepper to taste
What you do:
- Place spinach in a large bowl. Slice the veggie bacon into small pieces and add to greens along with the mushrooms and walnuts.
- Pour on the dressing ingredients, toss gently, and serve.
