Fragrant Basmati Pilaf

On its own, basmati is a delicious and fragrant grain. When matched with the proper seasonings, spices, and a little crunch, this popular rice makes the best pilaf.

What you need:

  • 1 cup white basmati rice
  • 2-1/2 cups vegetarian beef or chicken broth, boiling
  • 1 cinnamon stick
  • 1 bay leaf
  • 1 cup frozen peas, thawed
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon onion powder
  • 1 teaspoon tamari
  • 2 tablespoons chopped cashews

What you do:

  1. Place the rice in a wire mesh colander and rinse thoroughly. Set aside. 
  2. In a medium saucepan, bring the broth, cinnamon stick and bay leaf to a boil. Add drained rice, thawed peas, and spices. Bring to a second boil, cover, and lower heat. Simmer for 20 minutes. 
  3. Fluff gently with a fork, remove bay leaf, sprinkle with chopped cashews, and serve.
