Fragrant Basmati Pilaf
On its own, basmati is a delicious and fragrant grain. When matched with the proper seasonings, spices, and a little crunch, this popular rice makes the best pilaf.

Serves 6
What you need:
- 1 cup white basmati rice
- 2-1/2 cups vegetarian beef or chicken broth, boiling
- 1 cinnamon stick
- 1 bay leaf
- 1 cup frozen peas, thawed
- 1/2 teaspoon turmeric
- 1/2 teaspoon onion powder
- 1 teaspoon tamari
- 2 tablespoons chopped cashews
What you do:
- Place the rice in a wire mesh colander and rinse thoroughly. Set aside.
- In a medium saucepan, bring the broth, cinnamon stick and bay leaf to a boil. Add drained rice, thawed peas, and spices. Bring to a second boil, cover, and lower heat. Simmer for 20 minutes.
- Fluff gently with a fork, remove bay leaf, sprinkle with chopped cashews, and serve.
