The rumors are true: Daiya Cheese shreds, melts, stretches, and makes vegan-pizza dreams come true with the greatest of ease. This innovative, soy-free, dairy-free cheese has been generating buzz in the veg community (the VN team first sampled it back in March at the Natural Products Show, bestowing it with a “Best of Show” award), and for good reason. Made from cassava, a shrub also responsible for the joys of tapioca, Daiya delivers unbelievable flavor and texture without any major allergens.
