Plant-based diets are on the rise among college students, according to new survey results. Bon Appétit Management Company, a catering service that oversees corporate, college, and university dining halls, noticed an increase in the amount of students who claim to follow a vegetarian or vegan diet, according to Terri Brownlee, the regional director of nutrition for the company. Bon Appétit reports that from the 2005-2006 school-year feedback survey the company administered to students, eight percent said they were vegetarian and less than one percent said they were vegan. Now, in the 2009-2010 survey, 12 percent identified as vegetarian and two percent said they were vegan.
