On Sunday, Anderson Cooper profiled Spanish chef José Andrés on 60 Minutes, and the world-renowned cook boldly stated that the future of cooking is vegetables and fruits, and said that he finds meat overrated and boring. Andrés, who owns eight restaurants in the US, compared the experience of eating pineapple to chicken, concluding that fruit offers a richer, longer lasting taste than meat. While not vegetarian, Andrés says that he doesn’t eat meat regularly, and that vegetables, such as asparagus and green peas, offer tastier alternatives to lackluster meat. Andrés is well known for his exploration and experimentation with molecular gastronomy, which studies the physical and chemical processes occurring during cooking.
