On Monday, scientists at the Harvard School of Public Health report that a recent study indicates that eating two or more servings of brown rice per week reduces the risk of developing type 2 diabetes by about 10 percent compared to those who eat it less than once a month. Research also showed that people who eat white rice—a refined, simple carbohydrate—five or more times per week are almost 20 percent more likely to contract type 2 diabetes. The conclusion was that replacing just one third of a serving of white rice with whole grain brown rice each day could decrease the risk of developing diabetes by 16 percent.
