People for the Elimination of Animal Cruelty through Education, a student organization at the University of California, San Diego, has gathered a total of 4,000 signatures requesting more vegan dining options at the school’s facilities. PEACE founder Alisha Utter tells the school’s newspaper, The Guardian, that the group collected 2,000 signatures on a petition that circulated in 2010, as well as an additional 2,000 on a petition this fall. The petitions were compiled and brought to the university dietitian Becky McDivitt and executive chef Vaughn Vargus, but changes have yet to be made to the school’s menus.
