What You Need for the Salad:
- 1/2 medium cauliflower
- 1/2 bunch broccoli
- 6 ounces fresh mushrooms
- 1 roasted red pepper, chopped
What You Do for the Salad:
- Chop cauliflower, broccoli, and mushrooms into bite-size pieces. Blanch separately in salted boiling water, plunge into cold water and set aside to drain. Place in a large mixing bowl with roasted red pepper.

- Salt and pepper to taste
