In a recent post, national nonprofit Mercy For Animals found that several media outlets are placing vegetarian and vegan foods as one of the top food trends for 2013. Among the publications is Restaurant Magazine, which estimates vegetables will be the top trend for the upcoming year. Also in MFA’s list is Supermarket News magazine, which predicts a shift in protein sources away from meat-based options to meatless proteins including tofu, beans, nut butters, and legumes, and an increased awareness and consumption of the benefits of plant-based meals. Consulting and strategy firm Sterling-Rice Group was also included, and predicts, like Restaurant Magazine, that vegetables will “take over the plate,” while restaurants move towards offering all-inclusive menus.
