In 2012, Chipotle, a Denver-based Mexican fast food chain, increased its sourcing of sour cream and 65 percent of its cheese from pasture-raised cows and announced its support of banning antibiotics in livestock feed; next month, the chain will roll out a shredded tofu option in San Francisco locations. In the face of rising beef and dairy costs, Chipotle will offer “Sofritas,” shredded tofu lightly fried and stewed in tomatoes, poblano peppers, and chipotle sauce. Sofritas will be available to San Franciscans this February and joins the restaurant’s other vegan menu items, including black beans seasoned with cumin and garlic and fajita vegetables. If Sofritas does well, the meat-free option will be added to Chipotle menus across the US.
