Inspired by Bill Clinton’s transformation from Southern-food enthusiast to a plant-powered leader, New York Times contributor Tara Parker-Pope decided to transition to a diet devoid of dairy and meat. In the recent Times blog post, “How to Go Vegan,” Pope notes that the initial conversion to cruelty-free fare was a challenge, but with advice from vegan culinary experts and foodies, she and her family were able to successfully ease into a plant-based diet. Pope relays her acquired wisdom and offers simple tips such as sprinkling nutritional yeast on popcorn and substituting cornstarch for eggs as a thickening agent in puddings and sauces.
