Following in the footsteps of San Diego and Los Angeles, the Buffalo Public School District is now partaking in Meatless Mondays to promote nutrition and expose students to healthful food options. “At Buffalo Public School District, we believe that healthy eating helps create healthy minds,” says Bridget O’Brien Wood, director of the school’s Food Service Department. “We’re participating in Meatless Monday to encourage healthier eating decisions and start to introduce our students to the wide variety of healthy, delicious plant-based foods available.” Meatless Mondays are becoming increasing accepted by the general public—one survey conducted by FGI Research found that nearly half of American adults were aware of the campaign, while 27 percent of those polled said the campaign had played a role in reducing their meat intake.
