Forbes magazine has recently recognized high-end vegan dining alongside devilled eggs, pastrami, and lobster rolls as one of 2013’s “Top 10 Food Trends.” The publication cites chef Tal Ronnen’s Los Angeles-based Crossroads Restaurant as well as Matthew Kenney’s M.A.K.E. eatery in Santa Monica as testaments to plant-based dining’s rise to cultural prominence. Mike Thelin, co-founder of the renowned food festival Feast Portland, believes that veganism’s popularity is attributed to its healthful benefits: “The new wave of veganism is more about health than animal welfare,” says Thelin, as quoted by Forbes. “For better or worse, this is why it will have more staying power.”
