Emory University Cafeterias Go Meatless on Mondays

The Southern university’s students and professors have taken to the vegetarian campaign.

Emory University in Atlanta, GA has joined hundreds of schools across the country in embracing Meatless Mondays. The program was started at the Johns Hopkins Bloomberg School of Public Health ten years ago, and since then it has been embraced by numerous institutions, ranging from public schools to private businesses. “Our goal is to promote both health and environmental benefits of choosing a meatless diet,” says Senior Director of Campus Dining Dave Furham. The burgeoning cruelty-free campaign has piqued the interest of several of the university’s professors, including Iris Smith, an instructor at the Rollins School of Public Health, who has created a project centered around Meatless Mondays, in which students will examine and analyze the community-based program.
