The New York Times recently interviewed vegan Jews to find out how they navigate the sacred holiday. Mayim Bialik from The Big Bang Theory told the news source that during the Seder meal, she replaces the symbolic lamb shank bone and hard-boiled egg with a roasted beet and an egg-shaped musical shaker for her children. To circumnavigate the bean and rice restriction, the Times notes that quinoa is usually implemented, whereas matzo balls, which usually use egg as a binding agent, still pose a challenge.
