BabyCakes, a vegan bakery originating in New York City, was recently chosen as part of Business Insider’s series “Small Businesses, Big Ideas.” Erin McKenna started the franchise in 2005 with a shop in Manhattan’s Lower East Side, and has expanded its allergen-free, kosher, and vegan treats in BabyCakes locations across the US. When McKenna first opened the original location, she had just three recipes for vegan cupcakes, and while the menu now features doughnuts, cookies, and soon bread, the New York bakery sells about 500 cupcakes per day. BabyCakes has expanded to include locations in Los Angeles and Disney World, with plans to open in San Francisco and Chicago. McKenna is also the author of two cookbooks: BabyCakes and BabyCakes Covers the Classics.
