Famous Las Vegas Chef Talks Vegan in LA Weekly
The former executive chef of Wazuzu in Las Vegas’s Encore hotel offers advice on meat-free cooking.

Chef Jet Tila was recently spotlighted on LA Weekly’s blog, discussing his personal connection to health and diet and offering up suggestions for vegan kitchen staples. Tila recalls growing up with vegetable-focused meals, where rice took up nearly a third of his plate and vegetables made up more than half. When he fell into a fast food diet, he realized the impact food had on his health: “I started coming back to the way we [used to] eat everyday, and I lost 80 pounds … I’ve ridden a roller coaster and it’s directly tied to diet.” Tila, who was the executive chef of Wazuzu in Steve Wynn’s Encore resort, suggests having frozen fried tofu, Thai soybean sauce, grains, and legumes around for a quick, balanced meal.
