Jay Astafa, who began his vegan culinary venture serving dairy-free pies at family-owned 3 Brothers Pizza Cafe on Long Island, will host a fine dining pop-up restaurant at The Old Bowery Station from April 25 to 26. Patrons can expect to feast on aged cashew cheese and brie, king oyster mushroom scallops, and smoked cauliflower steak, among other dishes. “Chefs think of vegetables as side dishes, but on my tasty menu vegetables are taking center stage,” says Astafa, who plans to open a full-time restaurant in New York City by late 2013. Tickets for the pop-up can be purchased online for $95—anyone who wants a seat should act quick, many of the available seats are already sold out.
