New Casual Vegan Eatery Opens in Jacksonville, FL
River City residents can enjoy cruelty-free fare at the new vegan restaurant Dig Foods.
May 7, 2013
After numerous successful pop-up events, 36-year-old Shawn Sigmon opened vegan restaurant Dig Foods inside a bar and music venue called Underbelly. Dig Food’s mission is to prove “nice food made with no animal products” is possible, Sigmon tells jacksonville.com. The rotating lunch menu offers five to eight dishes per day, all priced at $10 or less. Past dishes have included Oregano Balsamic Roasted Cauliflower, Gnocchi with Butternut Squash, Zesty Tomato Sauce, & Fresh Basil, and Black Eyed Pea Chow Chow Sandwiches. The eatery uses organic produce from farms such as Jacksonville’s Down to Earth Farm.
