Austin, TX’s Newest Plant-Based Food Truck Opens

Bat City residents can now enjoy Red Rabbit Cooperative Bakery’s famed vegan donuts from its new food truck.

Red Rabbit Cooperative Bakery recently opened a food truck in Austin’s North Loop neighborhood. Red Rabbit began as a wholesale doughnut outlet after founder Cathy Ruiz watched Michael Moore’s Capitalism: A Love Story and decided to leave behind her corporate career. According to the bakery’s website, it is run as a worker cooperative, with non-hierarchical ownership and management, and the philosophy that “by living and eating in a way that exemplifies our ideologies, we have the power to be revolutionary.” Red Rabbit’s vegan doughnut selection includes flavors such as Maple Glazed with Candied Walnuts, Coffee Glazed, and Lemon Sugar, and is the second all-vegan food truck to join the North Loop community, serving alongside The Vegan Nom.
