Mexican fast food chain Chipotle will expand the test market for Sofritas to the Pacific Northwest, reports Bloomberg Businessweek. “We’re expanding the Sofritas test to include our restaurants in the Pacific Northwest this month, and we’re considering additional markets this fall,” shared restaurant founder Steve Ells during a recent company earnings call. After last February’s Northern California debut of the non-genetically modified braised tofu filling from local supplier Hodo Soy, Chipotle tested the option in Southern California, and within months Sofritas made its way onto all California Chipotle menus. The vegan option makes up four to five percent of the fast food chain’s sales in California, and Chipotle hopes Sofritas will continue to appeal to health-conscious diners beyond just the vegan community.
