New York City will soon be able to enjoy plant-based cuisine from the latest vegan food truck to emerge, The Green Radish, reports the blog SuperVegan. The Green Radish’s owner James Rafferty has been vegetarian for more than two decades, recently making the switch to veganism, and he hopes to share his cruelty-free cuisine with everyone, not just vegans––though the biggest challenge may not be appeasing omnivore palates. Rafferty says the city’s restrictive laws and regulations for opening and running a food truck have proved difficult. On Green Radish’s menu are black bean burgers and a vegan lobster roll, and the truck is confirmed to begin serving its food at the Montclair Jazz Fest on August 17.
