Veteran chefs are taking to Miami to launch their plant-based culinary ventures.

According to the an article published in the Miami Times last week, the rising vegan trend is inspiring professional chefs with years of culinary experience to open pop-ups, storefronts, and brick and mortar establishments in the Florida city. Restaurants such as the House of V, Earth N’ Us Farm, and Love & Vegetables each bring diverse atmosphere and a unique set of offerings to the table. House of V is a craft bakery where the pastries are garnished with micro-greens and edible flowers while Earth N’ Us Farm has six-course meals where diners pay only what they can afford. Renowned raw food chef and cookbook author Matthew Kenny is opening up a culinary school and a locally-inspired restaurant in Miami, called the White Lotus, as well.
