Starting this week, all Colorado Chipotles will be serving shredded tofu braised in tomatoes, poblano peppers, and spices. At the beginning of this year, the fast food chain made headlines by introducing the meat-free, soy-based filling for its famous burritos, salad, tacos, and bowls. After testing the vegan Sofritas filling out in San Francisco first, Chipotle expanded the soy option’s availability to all of California. The organic, non-GMO soy used in Sofritas comes from Northern California’s Hodo Soy, and is a crowd-pleaser. “I know it’s definitely taking away sales from meat, and the meat-eaters are switching to try something new … People are digging it,” Chipotle chef Nate Appleman tells Denver’s Westword blog.
