Silicon Valley Startup Creates “Pretty Perfect” Vegan Shrimp

New Wave Foods hopes to “disrupt food, not the oceans” with realistic-tasting plant-based seafood products.

Silicon Valley biotechnology startup New Wave Foods was recently profiled on food website The Good Food Institute for its vegan shrimp product. According to CEO and co-founder Dominique Barnes, New Wave has been able to “mimic the taste, texture, color, and nutritional profile of shrimp” to create a “pretty perfect” popcorn shrimp. “We use soy for protein and red algae for flavor,” Barnes said. “Red algae are what shrimp eat in the wild, so they contribute to the flavor profile.” New Wave plans to have its shrimp in stores sometime next year, but Google already serves it in its employee cafeterias.
