Vegan food truck V-Grits is slated to open a brick and mortar in Louisville, KY in spring 2017. The restaurant will feature a deli and café, and will serve as the production facility for the V-Box weekly meal delivery service which delivers to select cities nationwide and includes recipes with pre-packaged, hand-picked ingredients. The eatery’s menu will include food-truck favorites such as the barbeque macaroni and cheese and southern-style burgers, and will introduce new items such as vegan chicken wings and pimento cheese grits. The adjoining deli will sell products such as housemade cheesy “Soul Sauces”—cashew-based mozzarella and cheddar spreads, and will be available in retail stores and for online national delivery beginning in October. V-Grits is the latest veg spot to open in Louisville, joining the likes of Nolafare and Heart and Soy.
