Girl Scout cookie season is here, and although we have no trouble devouring these sweet treats on their own (they’re especially easy to inhale straight from the freezer), we began to wonder what other chocolate-mint concoctions we could make in our kitchens. This curiosity lead us to search online for recipes that recreate the Thin Mint’s patented chocolatey crunch. Here are a dozen recipes that have us wanting more of this amazing dessert.

1. Healthy No Bake Thin Mint Treats
Fudgy, healthy no bake treats that are ready in less than 10 minutes? These cookies sound almost too good to be true, but thanks to the culinary creation of The Big Man’s World, they are a reality. This quick-and-easy recipe delivers a snack that is not only full of Thin Mint flavor, but is also protein-packed and gluten-free.

2. Thin Mint Energy Bites
We can’t think of a better way to boost our energy than with a bite of chocolatey, minty goodness. Luckily, with just a handful of ingredients and a food processor, Blissful Basil transforms the cookie we love into a power ball to fuel our late afternoon cravings. We dare you to eat just one!

3. {One Bowl} Mini Thin Mint Donuts
Our favorite cookie just took over breakfast with these chocolate doughnuts from With Salt & Wit! These scrumptious cakes are covered with a white chocolate and mint icing and then laced with a chocolate drizzle. Made with wholesome ingredients such as whole wheat flour, flaxseed, and coconut oil, this breakfast recipe is Thin Mint nirvana.

4. Thin Mint Bliss Balls
The next time a non-vegan asks you where you get your protein, give them one of these yummy bites with cashews, almonds, dates, and vegan protein powder. These super easy, no bake balls from House Vegan pay homage to the chocolate-mint taste of our beloved Thin Mint. Even better? They’re gluten-free!

5. Thin Mint LÄRABAR
Beard & Bonnet has redefined the classic mint bar with this recipe packed with dark chocolate morsels and raw almonds. Dates and oats combine as the base for this healthy, raw snack, and the result is a delicious, chewy delight that does justice to the flavors of our Girl Scout cookie of honor.

6. Thin Mint Freezer Fudge
Prepare to go into chocolate-mint ecstasy with this amazing, gooey fudge from The Vegan 8. This dessert takes only 10 minutes to prepare, leaving plenty of time to ponder who you will share it with as you stalk your freezer, waiting for these silky squares to firm up.

7. Thin Mint Shake
Have you ever wondered what it would be like to sip your Thin Mint? If so, this thick, creamy, frozen dessert provides the answer. In only 10 minutes and with just four ingredients (almond milk, bananas, thin mints, and matcha tea), this recipe from Veganosity offers a healthy, drinkable twist to our cookie favorite.

8. Raw Thin Mint Brownies
Chocolate Covered Katie recreates the Thin Mint in the raw with these mouth-watering chocolate squares. She’s added walnuts to the mix (every good brownie should have ‘em) for a chocolate-mint taste combination that’ll have you wishing these were sold in front of your local grocery store.

9. Thin Mint Chia Pudding With Brownie Bottom
A no-bake gluten-free brownie is the base for Food Faith Fitness’ inspired way to experience our favorite Girl Scout cookie. Top the brownie with a mint-chocolate chia pudding and enjoy this for breakfast! With only six ingredients and five minutes of preparation time, we think it makes for an easy dessert, too.

10. White Chocolate Thin Mint Popcorn
Just when we thought Thin Mints couldn’t get any better, Lolly Jane crushes and tosses them with popcorn and melted white chocolate. As if things couldn’t get any more decadent, the mint- chocolate mix is then combined with white chocolate chips. Our advice? Make a double batch because they’re bound to go fast!

11. Thin Mint Raw Bites
These bites from Ferns & Peonies ditch the processed sugar, but are full of the chocolate-mint flavor we crave in a Thin Mint. The bottom layer makes a tasty dough to sample alone, but this recipe increases the sweetness with an easy chocolate sauce that is lusciously delicious.

12. Vegan Thin Mint Ice Cream
Frozen thin mints get a makeover in this silky smooth frozen indulgence from Seitan Beats Your Meat. Coconut cream and non-dairy milk are the main ingredients in this nice cream, while chocolate chips and actual Thin Mints are added. This ice cream is scrumptious on its own, but might we suggest sandwiching it between two Thin Mint cookies for a dessert almost to delectable to eat?
