Old-fashioned Spinach Salad

This traditional spinach salad has a healthy vegetarian twist.

What You Need for the Salad:

  • 1 large bag of baby spinach, washed and dried
  • 4 strips veggie bacon, cooked according to package directions
  • 6 or more button mushrooms, brushed clean and sliced
  • 1/4 cup walnut halves

What You Need for the Dressing:

  • 1 tablespoon balsamic vinegar
  • 1 teaspoon olive oil
  • Salt and pepper to taste

What you do:

  1. Place spinach in a large bowl. Slice the veggie bacon into small pieces and add to greens along with the mushrooms and walnuts.
  2. Pour on the dressing ingredients, toss gently, and serve.
