Chopped Veggie Salad

This colorful and crunchy salad makes a wonderful lunch on a warm day.

What you need:

  • 1 green pepper, seeded and chopped
  • 1 red pepper, seeded and chopped
  • 1 yellow sunburst squash, chopped
  • 1 zucchini squash, chopped
  • 2 green onions or 1/2 red onion, peeled and chopped
  • 2 stalks celery, chopped
  • 1/2 cup jicama, chopped
  • 1/4 cup parsley, chopped
  • 3 tablespoons seasoned rice vinegar
  • Salt and pepper to taste
  • 2 large kale leaves, washed and dried

What you do:

  1. Combine all ingredients except the kale and toss gently. 
  2. Line plats or bowls with the kale and serve the salad on top.
