Chopped Veggie Salad
This colorful and crunchy salad makes a wonderful lunch on a warm day.

What you need:
- 1 green pepper, seeded and chopped
- 1 red pepper, seeded and chopped
- 1 yellow sunburst squash, chopped
- 1 zucchini squash, chopped
- 2 green onions or 1/2 red onion, peeled and chopped
- 2 stalks celery, chopped
- 1/2 cup jicama, chopped
- 1/4 cup parsley, chopped
- 3 tablespoons seasoned rice vinegar
- Salt and pepper to taste
- 2 large kale leaves, washed and dried
What you do:
- Combine all ingredients except the kale and toss gently.
- Line plats or bowls with the kale and serve the salad on top.
