While the hunt for veg-friendly fare can occasionally leave even the most resourceful of herbivores searching far and wide, those heading north need look no longer—thanks to the January 2009 opening of the world‘s highest-latitude vegetarian restaurant. Tromso, the Scandanavian city that already claims the world‘s northernmost university, brewery, botanical garden, and planetarium, now calls itself home to the plant-based Sivertsen Kafé. This rustic restaurant serves up an entirely vegetarian menu inside the wall of an old prison.
