One woman believes that a low-fat vegan diet saved her life.

Is a veggie diet the cure for what ails you? Katherine Lawrence thinks it could be. At the age of 27, she was diagnosed with severe endometriosis, uterine cysts, and ovarian cysts. Her doctor’s solution involved putting her into early menopause that would be followed by a hysterectomy, but Lawrence had other plans. She chose to clean up her diet and eat only low-fat vegan foods, and after five weeks, her health problems disappeared. She now teaches cooking classes aimed at promoting the benefits of low-fat vegan eating as part of the non-profit group The Cancer Project. And with recipes like Spicy Veggie Wraps and Guiltless Chocolate Mousse, Lawrence’s prevention plan certainly makes for one tasty remedy.
