One thing that you’ll never find on the menu at Chez Panisse in Berkeley, Calif., is a dish with shark fin. That’s because renowned chef, restaurateur, and author Alice Waters signed Humane Society International’s No Shark Fin Pledge, agreeing never to serve or consume products containing shark fin. A number of chefs have already created and implemented faux-shark dishes out of concern for the declining shark population. Water says she understands how serious the threat is to sharks and, in regards to signing the petition, she “encourage[s] other chefs and culinary industry leaders to do the same.”
