Eleven Island Dressing

This dressing goes wonderfully with the Fruit & Baby Greens Salad.

What you need:

  • 1 papaya, peeled, seeded and diced
  • Juice of 2 limes
  • 1/3 cup soursop nectar (guanabana)
  • 1/4 teaspoon Cajun seasoning
  • 2 teaspoons white wine vinegar
  • 2 tablespoons tahini
  • 2 tablespoons olive oil
  • 1/4 teaspoon sea salt

What you do:

  1. In a blender, combine all ingredients and pulverize until smooth. Chill before tossing with Exotic Fruit & Baby Greens Salad.
