The Miami, Fla. Italian restaurant Escopazzo has launched a new raw, vegan menu. Giancarla Bodoni, executive chef of South Beach’s Escopazzo, has created a menu dedicated to raw and vegan specialties, such as Vegetable Lasagnette with Pine Nut Ricotta and Pesto, vegan Fettucine Alfredo, and Vegan Caprese. The new selections are set to launch in mid-November. Bodoni is passionate about the preparation of raw, vegan foods, and she told VegNews that the vegan options were important in order for the restaurant to cater to, rather than merely accommodate, their vegan customers, and that the contemporary restaurant understands that food and dietary preferences are constantly evolving.
