Adrak Chai (Ginger Tea)

My favorite recipe for Masala chai calls for fresh ginger. This tea is excellent for when you feel a cold coming on or when the weather is damp.

What you need:

  • 2 cups water
  • 1 teaspoon grated ginger
  • 2 pieces of lemon grass, 3 to 4-inches each
  • 2 teaspoons sugar
  • 2 tea bags or 2 teaspoons loose tea leaves
  • 1/2 cup soymilk

What you do:

  1. In a teapot add water and bring it to a boil. Peel and grate ginger. Bundle up the lemon grass stalks and add it to the water with the grated ginger and sugar. Boil this concoction for four minutes.
  2. Remove from heat and add the tea bags or loose leaves and let simmer for 3 minutes. Heat the soymilk separately, and add it just before serving. You can prepare the concoction of ginger and lemon grass and keep it in the refrigerator for up to one week. Just heat up this herbal water and add tea bags and soymilk when desired.
