French Toast
Nothing makes a better breakfast-or brunch-than deliciously battered and pan-fried French toast. Serve with your choice of pure maple syrup or fresh fruit marmalade.

Makes 6
What you need:
- 1/2 cup whole wheat pastry flour
- 1/4 teaspoon salt
- 1 cup soymilk
- 1 teaspoon vanilla
- 1 tablespoon olive oil
- 6 slices whole wheat bread
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
What you do:
- Whisk together flour and salt. In a separate bowl combine soymilk, vanilla and oil. Pour the soymilk combination into the middle of the dry ingredients, whip, and let stand for 15 minutes. Saturate both sides of a piece of the bread in the batter.
- Cook on a lightly oiled, preheated griddle, cooking each side until brown (approximately 3 minutes each side). Remove from the griddle and place on a piece of paper towel to soak up any excess oil. Sprinkle cinnamon and nutmeg on top of the toast.
