Roasting gives asparagus such a sublime depth of flavor that it only needs simple seasoning.
What You Need:
- 1 1/2 pounds thick asparagus, ends trimmed
- 2 tablespoons olive oil
- Salt and freshly ground black pepper
What you do:
- Preheat oven to 425 degrees. Toss asparagus with olive oil and arrange in a single layer on a lightly oiled baking sheet. Season with salt and pepper to taste.
- Roast until just tender, about 10 minutes. (The timing will vary depending on the thickness of the asparagus.) Remove from oven and transfer to a shallow serving platter.
